1 lb White beans
1 quart Water
1 quart Chicken broth
1 lb Ham
1 cup Onions, diced
1 cup Celery, chopped
2/3 cup Carrots, chopped
2 tsp Garlic, minced
Tabasco sauce
Salt and pepper
Herbes de Provence

Soak the beans in at least 2 quarts of cold water for about 2 hours. Drain the water.
Put the ham, beans, and chopped vegetables in the water and chicken broth in a large pot. Season with salt and pepper to taste. Bring to a simmer and simmer for about an hour, until the vegetables are soft.
Toward the end of the cooking time, add several drops of Tabasco to taste. Add a pinch of herbes de Provence to taste. Adjust salt and pepper. Serve with a pinch of chopped parsley.
